Banana Muffins A La Magali

When Everybody Thinks You Can't Bake Anymore...


March has been a very weird month so far. 

Mars est un mois très bizarre jusqu'à présent.

 
One morning, we woke up with ice on our windows. The picture shows the bathroom window... And that's all you'll see of the bathroom for now. Or maybe Shadow has a basket in here that is located exactly where the sun beams drop...


Un matin, il y avait une fine couche de glace sur les fenêtres. La photo montre la fenêtre de la salle-de-bains et c'est tout ce que vous verrez de cette pièce pour l'instant. A moins que Shadow n'ait un panier dans cette pièce stratégiquement placé là où arrivent les rayons de soleil...

 
But some days are very sunny and it feels like spring is just around the corner, daffodils are here to prove that idea.


Mais il y a aussi des journées très ensoleillées et les pétales des jonquilles jouent alors agréablement avec la lumière.


So we alternate days spent in the garden and days spent inside.


Du coup, nous alternons les après-midis dans le jardin et les journées au chaud dans le cottage.

 
The weather is always a good excuse to have a nice tea time, if you ask me.

La météo, c'est toujours une bonne excuse pour un goûter, d'après moi.

It's cold? Let's have a comforting cup of tea and some muffins!

Il fait froid ? Vite, une tasse de thé et un muffin pour se réchauffer !

It's sunny? Why not having tea in the garden?

Il fait beau ? Pourquoi ne pas faire une pause goûter dans le jardin ?

The thing with tea time and muffins is that it became very complicated at the end of last year when the doctor, completely unable to stop the fact that all my vitamins were going away at speed light, talked to me about an experimental diet.

Cet art de vivre (j'emploie "art" au sens très, très large) a été sérieusement secoué depuis la fin de l'année dernière. Incapable d'enrayer une fuite très rapide de toutes mes vitamines, mon docteur m'a proposé un régime expérimental. J'ai accepté.

I'm not going to explain all the details here, but I now have to bake muffins without wheat, without eggs, without dairy, without vanilla and without apple (among so many other things).


Je  ne vais pas rentrer dans les détails maintenant, mais disons qu'il me faut imaginer des muffins sans utiliser de blé, d’œuf, de lait, de vanille ou de pomme (entre autres choses).


I'm not going to bore you with how many times I need to do each recipe to get things right and I'm just going to give you what I came up with: delicious banana-chocolate-walnut muffins.

Je vous passe le nombre de tests qu'il y a eu pour chaque recette et je vous livre la version finale des muffins banane-chocolat-noix à ma façon. 


Here's what you'll need:
  •  4 ripe bananas, mashed;
  • 3 tablespoons canola oil;
  • 1/2 cup whole rice flour;
  • 1/2 cup white rice flour;
  • 1/2 cup potato starch;
  • 2 teaspoons baking powder;
  • 3/4 to 1 teaspoon flax seeds, ground;
  • 1/2 cup raw sugar;
  • 1/4 cup dark chocolate chips;
  • 1/4 cup walnuts (already opened by my father who brings me some every time he visits).
I use a coffee grinder for my flax seeds. Pour broyer les graines de lin, j'utilise un moulin à café.

 Ce dont vous avez besoin:
  • 4 bananes mûres, écrasées;
  • 3 cuil. à soupe d'huile de colza;
  • 1/2 tasse de farine de riz complet:
  • 1/2 tasse de farine de riz blanc;
  • 1/2 tasse de fécule de pomme de terre;
  • 1 sachet de levure chimique (environ 2 cuil. à café);
  • 1 cuil. à café (ou un peu moins si vous n'avez pas l'habitude) de graines de lin moulues;
  • 1/2 tasse de sucre non raffiné;
  • 1/4 tasse de pépites de chocolat noir (oui, on en trouve sans vanille, si quelqu'un a besoin de la marque, me demander);
  • 1/4 tasse de noix (gentiment cassées d'avance par mon papa). 

Just mix them in that order, pour into muffin cups and bake for about 20 to 25 minutes in a 350°C/360°C oven.


On mélange tout bien dans l'ordre, on verse dans des coques à muffins et on enfourne pour 20 à 25 minutes à 180° ou 190°C. 


I promise fluffy and delicious muffins with that recipe, which can be eaten on the patio, squizzed between cats on the sofa, in the car on your way to school... And then you need to make an other batch!

Je vous promets de muffins moelleux et délicieux avec cette recette. Vous pouvez les déguster sur la terrasse, coincée entre deux chats sur le canapé, dans la voiture sur le chemin de l'école et en peu de temps, il vous faudra refaire une fournée !

  2. The daffodils blooming around your patio are a sure sign of spring. I've been eating a gluten, fodmap, and dairy free diet for over 2 years and your muffin recipe will be added to my baking list. They sound yummy! We've still got a foot of snow, so no flowers poking their heads through the ground yet. Enjoy your sunny days!

Hi...i hate that i don't get to see these first thing in the morning anymore..they look delish..i'm always amazed at what can be made without the traditional baking ingredients..vegan blogs have opened up a whole new world of..good for you junk..i'll have to give these a try..with my tea..i gave up coffee..an have been drinking some fabulous tea..the first day of spring an it was really cold here..i can not wait til it's in the 60's at night..stay warm..that basket in the sun looks comfy for a cat..

  33. The exterior shot of Cottage is very pretty, Magali. I love the blue shutters against the white walls. Your daffodils are lovely. Mine are still in the pushing-up-through-the-soil stage. We won't have blooms for awhile. Your cats are so sweet. Your muffins look delicious. I'm on a new diet for my osteoporosis which eliminates all dairy (except for plain yogurt with active culture), gluten and most animal protein -- except in very small amounts. I'm feeling my way through it. I have discovered quinoa, though, and I like it very much. All is not lost. :)

  34. Your muffins look absolutely delicious! The only thing I'd advise (and I'm saying this in a gentle way...only telling you this because it sounds like you eat healthy) is to use a mild olive oil or coconut oil instead of the canola oil, as canola is a "bad" oil. (You can Google it to find out why it's "bad".) I was going to make some blueberry muffins this afternoon. It is cold and drizzly here and a muffin and tea is just what I need this afternoon to go along with my book! Have a wonderful week. xoxo
