Greengage Tart

Greengage Tart A La Magali


First, I'd like to say a word about my mom's sewing-machine you're all so worried about. It survived the accident: only the pedal had to be changed and we found a shop in a small town nearby that could do it.

Tout d'abord, un petit mot pour vous rassurer sur l'état de la machine à coudre de ma maman dont tout le monde a l'air de s'inquiéter. La pédale a été réparée dans une petite boutique d'une charmante ville non loin de chez mes parents.

 
So her sewing-machine is saved... And we wish we could say the same thing about her plum-trees. When my parents bought their cottage, there were already three plum-trees in the garden. Since then, plum-trees have been the symbol of their home and I even found a cute vintage print of a plum tree that I gifted my mom (imagine I insert here a picture of said print - but in reality I forgot to snap it).

La machine à coudre est donc sauvée et ma maman aimerait sûrement qu'on puisse en dire autant de ses pruniers. Quand mes parents ont acheté leur cottage, il y avait trois pruniers dans le jardin. Ils sont devenus un peu les symboles de la maison et j'avais même trouvé une ancienne gravure de prunier que j'ai offerte à ma maman... Vous imaginez là que je vous la montre, mais en fait, il semble que je ne l'ai jamais prise en photo!

Suddenly this summer, one after an other, the plum-trees got sick. So we have plums for this summer, but we sadly don't think that the trees will survive until next summer.


Malheureusement, l'un après l'autre, les pruniers semblent cet été être touchés par une maladie... La récolte de cette année est bonne, mais étant donné l'état des arbres, nous doutons d'avoir la moindre prune l'an prochain.


Anyway, my mom brought me some plums last time she visited and I decided to use them in a tart. As usual with me, the recipe is very easy and I took extremely useful pictures to explain the process.

En l'honneur de ce qui est peut-être la dernière récolte de prune, j'ai fait une tarte dont je vous livre la recette. Comme d'habitude, c'est extrêmement simple et illustré par des photos indispensables!


Here's what you'll need:
  • a pie crust/pastry, store bought or handmade (mine is handmade using 1 and 1/2 cup of floor, 2 tablespoon of sugar, about 80/100g of butter and as much water as needed - usually 1/4 cup);
  • about 500 g greengage, halved and stoned,
  • 3 to 6 tablespoons of sugar (depending on your taste),
  • 2 eggs,
  • 1 teaspoon vanilla extract,
  • 150 to 200g (1/2 cup to 3/4 cup) of thick cream,
  • icing sugar for dusting.

Voilà ce dont vous aurez besoin:
  •  une pâte à tarte, achetée ou maison (je fais la mienne un peu au pif avec 1 tasse et demie de farine, 2 cuillerées à soupe de sucre, de 80g à 100g  de beurre - je ne pèse pas -  et un peu d'eau);
  • 500 g de reines-claudes,
  • 3 à 6 cuillerées à soupe de sucre (suivant votre goût pour le sucré),
  • 2 oeufs,
  • 1 cuillerée à café d'extrait de vanille,
  • 150 à 200 g de crème épaisse,
  • sucre glace pour décorer.

What to do:
  • First, mix all the ingredients for the crust, roll the pastry and put it in a shallow tin or open the pack of your ready made pastry and put it in the same shallow tin.
  • Put the tin in the oven at 200°C/390°F for 15 minues to pre-bake the crust. The recipe said to put baking beans on the crust to prevent any  bubling. I don't have any, so I put a baking sheet on it and load it with an other tin.
  • While the crust is in the oven, lightly whisk the eggs with the vanilla and the sugar, then add the cream.
  • Get the crust out of the oven, pour the above mixture in and carefully add the plums, cut sides up.
  • Bake in the oven for half an hour at 160°C/320°F.
  • Add icing right before serving (not 15 minutes before taking the pictures like I did).

Ce qu'il faut faire:
  • Faites votre pâte, étalez-la et mettez-la dans un moule à tarte ou sortez votre pâte toute prête et garnissez en un moule à tarte.
  • Mettez-la au four à  200°C pour un quart d'heure. La recette disait de garnir la pâte de billes d'argile pour empêcher la pâte de gonfler. Je n'en ai pas alors je vous file mon astuce: je mets du papier cuisson sur la pâte et je pose dessus un autre moule un peu plus petit...
  • Pendant que votre pâte cuit, battez légèrement les oeufs avec le sucre et la vanille, puis ajoutez la crème.
  • Sortez votre moule du four, versez la préparation sur la croûte et déposez joliment vos moitiés de prunes sur la crème.
  • Cuire une demie-heure à 160°C.
  • Saupoudrez de sucre glace juste avant de servir et non pas un quart d'heure avant de prendre les photos comme moi...


Side notes:
  • I like things to be sweet so I added a few spoons of sugar (it helps the medicine goes down), but the recipe originally only called for three tablespoons...
  • It tastes better if you whisk the eggs with a whisk sporting the colours of Brittany (which are white and black).
  • You may notice in one picture that I have the cutest striped Breton dress...
  • If you're a regular reader, you can play the seven errors game to see all that has changed in the kitchen and dining-room... I couldn't keep everything out of the pictures, even if I tried... More on that later!

Notes:
  • J'aime le sucré, donc je rajoute des cuillerées de sucre, mais la recette de départ n'en mettait que trois, à vous de voir...
  • La recette réussit mieux si vous battez les oeufs avec un fouet aux couleurs de la Bretagne.
  • Peut-être avez-vous remarqué dans une des photos ma super petite robe bretonne rayée.
  • Si vous êtes un lecteur régulier, vous pouvez jouer au jeu des sept erreurs pour trouver ce qui a changé récemment dans la cuisine et la salle-à-manger. Je n'ai pas pu tout garder hors champ. Je vous en dis plus dans quelque temps.

PS1: I have to attend a wedding in a few days. Not my favourite activity. And I have nothing to wear - as any woman would say on this occasion, I guess. I was dead serious when I told my mom this other day that I had no dress but that I had found the perfect umbrella for that day in case it was raining. She laughed. So I thought it would make you laugh as well to picture me going to church naked but with the cutest umbrella ever...

Je dois assister à un mariage dans quelques jours. Evidemment, je n'ai rien à me mettre... Et comme on ne se refait pas, je ne me suis pas occupée du tout de trouver une robe... Mais j'ai déniché il y a deux jours, le parapluie parfait pour le cas où il pleuve... J'irai peut-être toute nue au mariage, mais j'aurai le parapluie le plus mignon de toute l'assemblée!

  3. I have what seems like a ton of questions so I am going to number them like you number your post scripts.
    1. I am not familiar with greengage, is that a plum? Hopefully this question doesn't make look stupid.
    2. Could I use peaches in such a tart?
    3. Does the French word for tart also mean a woman of questionable morals like it does in English?
    You have great legs maybe the umbrella should be a serious option but that might make you a tart so maybe you should go with a dress. I like all of your inspirations but I am sure I could never find anything as fashionable here in our small town.
    4. So what is the shopping like in your area of Brittany?
    Love the peak of new things in the kitchen.

    1. So in your order:
      1. Greengage is a kind of green to yellow small plum.
      2. In the website I used for inspiration for this recipe, several people had tried with different fruits, so go ahead with peaches.
      3. The pun on "tart" doesn't really work in French, a shame for this post! But translation isn't always easy and something is always lost either in English or in French in each post!
      4. There are some nice shops in the nearby town, but I really hate shopping for clothes, that's why I've been postponing the dress search for ever! Also I have a tight budget for that, so it's difficult.

  7. J'ai l'impression que la desserte contre le demi mur de séparation avec ta salle à manger n'est plus le même, il me semble qu'il était blanc. Ce dont je suis sûre c'est que tu as dû monter sur un escabeau pour enlever les petites cocottes à oeufs en porcelaine qui était posées au dessus de ton passage cuisine salle à manger.
    N'aurais tu pas aussi changé la vaisselle dans ton buffet???
    Pour la tarte, perso je ne rajouterais pas de sucre.

  8. I think your tart, umbrella and that little seating area by the window are wonderful! She should have been planting some seedling plum trees along the way. They get old and die from different diseases. Hope some make it!

  11. La tarte a l'air délicieuse... moi, je fais des clafoutis, c'est plus vite fait ! J'ai vu que tu avais changé la déco sur ton étagère haute et j'aime bien tous ces petits "pots" blancs et bleus, je ne saurais dire si cela fait "frenchy" ou "british". Bon achat que ce super parapluie !

  14. Mmmm this looks too yummy. My Mom has a couple wild plum trees in her woods and I always think about trying to pick them before the racoons get them, then I always forget. I love that everybody was so concerned with your mom's sewing machine. As a sewist though, I understand.

  16. Last Thursday, I bought half a kilo greengage plums at the local market, thinking of a plum tart... but my (not so) dear husband ate them all :-s So no tart here ! But we love those plums, adore your cute dress as well as your dear Cottage ! And there is always next Thursday for new plums ! Marcy

  19. Magali, I'm not sure I could list all the changes in your cottage, but I love everything I see. Your dining room is so charming. Now the tart looks fabulous, and I imagine it tastes delicious. Your photographs are wonderful. I'm very sorry your parents' plum trees are not doing well. Oh, fruit trees can be so finicky!   22. My mother and I were just talking about the beach plums we used to pick near the shore. So many of the old trees were lost in the Big Storm, and then some more due to the ignorance of builders and residents who have the money for an ocean front house but not the soul for one. Your tart has inspired me - I am off to find a plum tree of my own. Good luck finding a dress for the wedding. You look quite nice in the umbrella but it is bad form to upstage the bride. Try to find something short my child, that will show off your adorable knees.
