Chicken Curry A La Magali

It's been forever since I last shared a recipe with you. It's not that I don't cook anymore, but I'm usually in too much of a hurry to have time to take pictures.

Cela fait bien longtemps que je n'ai pas partagé de recette avec vous. Ce n'est pas que j'ai cessé de cuisiner au Cottage, mais tout est généralement fait en étant à la bourre et en exécutant trois choses en même temps, alors, je ne prends pas de photos.


Anyway, yesterday, I made a very easy chicken curry recipe. It's not a genuine curry, but a simplified version, as usual with me. First, it had to be done in my very professional kitchen, and then, it had to be done quickly after the empty-your-attic sales I always go to in Sunday mornings.

Cependant, hier, j'ai fait une recette extrêmement facile de poulet au curry. Ce n'est pas une recette vraiment authentique, plutôt une version simplifiée, comme toujours avec moi. D'abord parce que cela doit être fait dans ma cuisine de professionnelle, ensuite parce que je l'ai testée de retour de mon vide-grenier du dimanche matin... Autant vous dire qu'il vaut mieux que la recette ne prenne pas des heures!


If I can do it, so can you!

Si je peux le faire, tout le monde peut le faire!


Here's what you'll need (serves four or three if you're really hungry or five if you're not):
  • oil (I used peanut oil/arachis oil, but any kind of oil that can be eated will do),
  • 2 onions,
  • 1 garlic clove,
  • 1 tablespoon of fresh ginger (I used frozen ginger as that's what I had),
  • 1 and 1/2 teaspoons of curry,
  • 1 and 1/2 teaspoons of ground coriander,
  • 1 teaspoon of curcumin,
  • about 200 g of tomato sauce - that's about 1 1/2 cups (I mean only mashed tomato -nothing added in it),
  • 4 chicken breasts,
  • 1 tablespoon of fresh mint,
  • salt and pepper,
  • 1/2 cup of yoghurt (I used one made of sheep milk - but any would do),
  • 1/3 cup of almonds,
  • 1/3 cup of cashew nuts,
  • Fresh coriander to serve.

Voici ce dont vous avez besoin:
  • huile (j'ai utilisé de l'huile d'arachide, mais n'importe quelle huile pouvant chauffer fera l'affaire),
  • 2 oignons,
  • 1 gousse d'ail,
  • 1 cuillerée à soupe de gingembre frais (j'en ai du surgelé toujours disponible),
  • 1 et 1/2 cuillerées à café de curry,
  • 1 et 1/2 cuillerées à café de coriandre moulue,
  • 1 cuillerée à café de curcuma,
  • environ 200g de purée de tomate,
  • 4 blancs de poulet,
  • 1 cuillerée à soupe de menthe fraîche,
  • sel et poivre,
  • 2 grosses cuillerées à soupe de yaourt (de brebis, c'est possible, j'ai testé),
  • 1 poignée d'amandes,
  • 1 poignée de noix de cajou,
  • de la coriandre fraîche pour décorer.

 What you need to do:
  • Put some oil in your "cocotte". Slice the onions, dice the garlic, add them to your "cocotte" with the ginger and the spices and let this heat for a few minutes.
  • Add the tomato sauce. From now on, if you have freshly painted walls and no backsplash, you want to cover the "cocotte" with its lid as shown above!
  • Cut the chicken in more-or-less even squares and add them to the cocotte. Add some fresh mint. Stir. And let this cook for about 20 minutes.

 Ce que vous devez faire:
  • Mettez de l'huile dans votre cocotte, émincez les oignons, coupez ou écrasez la gousse d'ail. Rajoutez cela dans votre cocotte avec le gingembre et les épices et laisser rissoler quelques minutes.
  • Ajoutez la purée de tomates. A partir de là, si vous avez des murs fraîchement repeints et pas encore de crédence, je vous conseille de couvrir votre cocotte, comme le montre une photo ci-dessus!
  • Coupez les blancs de poulet en morceaux, mettez-les dans la cocotte avec de la menthe fraîche, remuez et laissez cuire une vingtaine de minutes.

  •  Twenty minutes or so later (don't forget to check every now and then or it'll burn - I'm just guessing - it has never happened to me), add the yoghurt, salt, pepper. It takes a nice orangey colour once you've added the yoghurt. Then add almonds and cashew nuts. If you buy raw almonds with their skin on like me, put them in boiling water for one minute and then the skin is very easy to remove.
  • Let on the heat for a few more minutes and serve, srpinkled with fresh coriander.
  • Of course you can make a side dish, but I'm not showing mine because I don't want you to copy me... or because I didn't have time to make any!
That's fresh mint... I have to tell you because it's difficult to see the difference with coriander on pictures!
  • Vingt minutes plus tard (enfin, allez jeter un coup d'oeil de temps en temps, sinon cela pourrait brûler - j'imagine, cela ne m'est bien sûr jamais arrivé), ajoutez le yaourt, le sel, le poivre, puis les amandes et les noix de cajou. Si vous achetez vos amandes avec la peau comme moi, mettez-les une minute dans l'eau bouillante, ensuite la peau se retire très facilement.
  • Laissez chauffer un instant, puis servez parsemé de coriandre fraîche.
  • Vous pouvez servir avec un accompagnement de votre choix. Je ne vous montre pas le mien pour ne pas vous influencer. Ou alors, je n'avais pas eu le temps d'en faire un...



It was really worth looking for those damn cashew nuts for half an hour! It's a deliciously easy dish.



 Sérieusement, cela valait le coup de chercher ces fameuses noix de cajou pendant une demi-heure. C'est une recette délicieuse et facile.

Eh bien, maintenant, servez-vous. Essayez de ne pas en faire tomber une goutte sur ma nappe tout neuve! Tiens, en parlant de choses "neuves", j'ai encore deux ou trois détails à vous montrer dans ma cuisine!

  1. Beautiful cocotte! Love that red. I'd find any excuse to use it. Love curry, especially hot curry. This recipe sounds good! Maybe 'mashed' was the word you wanted for the tomatoes? Love the kitty pic!!

  12. When my brother was staying at university (rented a room for 3 years, a very very smal room but cosy) he was cooking on the same electric "2 hob" cooker! Oh nostalgia :-) He also cooked nice meals on it, though a lot more simple LOL Greetings, Marcy

  24. It looks yummy. I tend to make Thai green curries more than Indian ones, but this looks delicious with the nuts.
    My neighbours cat has decided that he quite likes my house too, although it makes my dog rather jealous. I found him lying on my bed this morning, after I'd been out in the garden !!

    1. Except for meringue, that won't dry correctly in my tiny oven, there's nothing that is reasonably easy, that I can't do with the tiny kitchen I have... One of the skills I had to master since I live in a cottage that needs complete renovation... Thank you so much for visiting!
